Brightside Entry | Finding Something to Eat

One of the most challenging things about going vegetarian is finding something to eat. It isn't cheap to eat healthy--somehow vegetable dishes in fancy places are always more expensive than other heart-attack courses and other places just do away with vegetables completely. But tonight, when Marz, Joy & I went out to dinner we found out that Capricciosa, this italian place, has a vegetarian menu! This was great news for me because I was planning on ordering a salad and just heading home for the main course. They have this delicious Eggplant Gratin which is basically scrambled Eggplant Parmejana. Basically the dish consists of a bunch of eggplants baked in a tomato and cheese sauce. Basic but very, very good! Their serving was huge too--we could hardly finish it. Thank you so much Joy & Marz for eating a no-meat dinner with me!
I don't think I ever talked about why I decided to transition into vegetarianism, so I guess this is just the place to do it: I don't like red meat. It just boils down to that, I guess. But I've found that so much of the time we get pressured into eating red meat because that's all that places serve. And I sort of hate that. Also, I found that eating meat makes me feel extremely and my body resistance always goes down when I eat big meat portions. In short: my diet, as it was, just wasn't working for me and health is wealth. Also, just to clarify the things that I do eat: I still eat eggs and dairy; also I have fish for protein--I wanted to cut this off but I realized that I have high uric acid (therefore ruling out legumes as a main source of protein) so I definitely need the good cholesterol you get from fish. 

So far, there've been lots of improvements. My skin feels way better--this pimple that called my cheek home for 2 months disappeared. Also, I wake up earlier and have more energy to get through the day. I've also lost around 3 pounds since starting, which is great! (Not that I'm looking to lose copious amounts of weight but a lower BMI is definitely not something to complain about.) Some people eat vegetables for the animals; I'm not quite so selfless. I think I'm mostly doing this for myself.
